<p>Li Ziqi is a Vlogger who showcases Chinese
food and living a traditional Chinese country-life. As an internet celebrity, she
gets more and more popular on YouTube and Chinese social media like Weibo. Even
though she lives in remote Sichuan, China, but she has more than 8 million
subscribers overseas and another 20 million followers in China. Her followers
praised her as a fairy with the Grace
in Disneyland. Most of her followers outside China don’t even know any Chinese

<p>In the beginning, Li Ziqi just wanted to
help improve the sale in her Taobao online shop by shooting some traditional

<p>Besides food, she made many more things for
daily use. As you can see in her videos, her nice wool cloak, warm silk quilt,
even the commonly used soil made oven were made by her.. She creates everything

<p><strong>Li Ziqi:</strong> <em>In today’s society, many people feel stressed. They face a lot of pressure in life and at work. I want them to relax and experience something nice to take away some of their anxiety and stress. Wouldn’t that be nice? When I worked in the city, it was about survival. No when I work in the countryside, I feel like I’m truly living. When I make my videos, I want to start with an angle that I’m familiar with. What do I want to bring to the audience? It’s not that complicated. I simply want people in the city to know where their food comes from. </em></p>

<p><strong>Li Ziqi: </strong><em>At first, I did everything myself. I’d set up a tripod, go there, film, and then press stop. That’s why all my shots are on a tripod and they don’t move. That’s why my videos are still filmed this way.&nbsp; </em></p>

I’d decide that my favorite thing to stuff my face with was strawberry cream cheese or peanut butter and jelly and then eat only strawberry cream cheese or peanut butter and jelly sandwiches for months at a time. Taking me out to restaurants wasn’t easy. I’d forego looking at the menu, opting instead for the finest chicken fingers the establishment could manage. Of course, I still wanted everyone to think I was adventurous. I’d order escargot then douse them in as much butter and garlic as possible so that I might as well have been eating a Cheddar Bay Biscuit from Red Lobster.</p>
<p>While my taste buds have matured past thinking that bologna is top-cut meat, I still refuse to eat certain foods. I knew that coming to China would present culinary challenges, but hey, there’s always McDonald’s right?</p>
<p>I dipped my toes—or tongue, if you will—into the Chinese food scene slowly, warming myself up with 宫保鸡丁 (gōng bǎo jī dīng – Kung Pao Chicken). The dish is a safe choice and available at almost any restaurant if you ask. It’s made with wine-glazed diced chicken, peanuts, and some combination of stir-fried carrots, peppers, onions, Sichuan peppercorns and garlic. Originally from the southwestern Sichuan province, Kung Pao Chicken has invaded the menu of almost every regional Chinese cuisine. Why? It’s delicious and hard to mess up.</p>

<p>Next I became infatuated with 四季豆 (sìjì dòu – green beans). Green beans you say? What’s so Chinese about green beans? When you throw in ground pork shavings, and enough 麻 (má – tingly flavor) and 辣 (là – spicy flavor) to fuel your work bathroom breaks for a week, you get a much different dish than bland old green beans. This is the dish that finally turned me on to spicy food. I asked the 服务员 (fúwùyuán – server) to add progressively more peppers and peppercorns until my tolerance to spice was at a level high enough to enjoy more daring epicurean offerings.</p>

<p>Of course, even the spiciest of spice connoisseurs needs a break every once in a while. For that, there’s 番茄炒蛋 (fānqié chǎo dàn – stir fried egg and tomato). The name of this dish says it all, but it can’t possibly make you understand how good the two ingredients can be when played off each other. A good chef will add just a hint of sugar, an element I never expected to be so delicious with egg and tomato.</p>

<p>Slowly, and with encouragement from those who eat family-style meals with me, I learned to love Chinese food. In fact, foods that I am loath to eat back home in the United States I jump at the opportunity to eat here. What do you think of when you hear the word tofu? Tofurkey? Tofu burgers? Generally meh cubes of nothingness? That’s what I thought too. Then I tried 家常豆腐 (jiācháng dòufu – home-style tofu) and 麻婆豆腐 (má pó dòufu – stir-fried tofu in chili sauce) and 豆腐卷 (dòufu juǎn – tofu balls) and realized that it wasn’t tofu I didn’t like, it was the flavorless way it was prepared.</p>

<p>Chinese food goes far beyond chicken and rice. There are Yunnanese mushrooms and Shanghainese soup dumplings. There are Xinjiang lamb kebabs and Shaanxi pork burgers. In fact, there are eight “Great Regional Cuisines of China”: Sichuan (川菜 – Chuān cài), Hunan (湘菜 – Xiāng cài), Guangdong (粤菜 – Yuè cài), Fujian (闽菜 – Mǐn cài), Zhejiang (杭菜 – Háng cài), Anhui (徽菜 – Huī cài), Jiangsu (苏菜 – Sū cài), and Shandong (鲁菜 – Lǔ cài). And those primarily just cover the east! With a wide range of culinary influences and offerings, China was always bound to have something I liked. It just took me opening my mind and stomach to something new to realize it.</p>

										<content:encoded><![CDATA[<p>“Until you can walk more than a few kilometers in any direction without running into a Starbucks, you’re not in the ‘real’ China,” my friend jokes as we take in the monolithic skyline of Shanghai’s Lujiazui on a recent summer night. If my friend is right, I’ve never seen the real China in my collective year and a half of being here. That news would surprise me and certainly set me on an existential tailspin as I question where I have been all this time, if not in China. Is Shanghai some 21<sup>st</sup> century Brigadoon (without all the singing and plaid)?</p>
<p>With mental images of rice paddies and millions of men who look just like Confucius, my friend, like many others I know, has a static view of a China that never really existed. To her, China is a homogenous society that stays locked in a hermetic chamber, sealed during a more glamourous time.</p>
<p>Before coming to Shanghai, I disparaged the city as too westernized, too cosmopolitan. The China in my mind did not include a place like Shanghai even though I knew that over 50% of China’s current population lives in urban areas much like it. My first exposure to China was Beijing, a hotbed of nationalism and requisite tourism. Ignoring the fact that the majority of sites in the capital were destroyed during the Cultural Revolution and later rebuilt, I felt that Beijing satisfied my preconceived notions of what China should be. The hutong alleys gave me Instagrammable moments of the old generation drying laundry on lines and cherubic babies with split pants squatting over sidewalks. The facades of buildings matched my mental image of multicolored pagoda architecture, and Wangfujing food street confirmed my idea that the Chinese are resourceful in their cuisine. If Shanghai had none of this, how could it be China?</p>
<p>The single-frame image that many foreigners have of China—as I once had as well—comes largely from an amalgamation of Han history and culture spread through literature and propaganda. Han, the dominant ethnic group at 92% of the current population, is named after the second major dynasty of a united China, lasting from 206BCE-220AD. While neither the longest lasting nor the most successful dynasty, the Han solidified power and influence over much of Central, Southeast, and Northeast Asia. Yet despite the persistence of their name, the Han weren’t the only people group to rule a feudalistic China. In fact, two of the most successful dynasties in terms of area conquered—the Yuan and Qing—were both “foreign” dynasties (the Yuan being Mongol and the Qing being Manchu). Even disregarding these two major time periods in China’s history, the country has never been the uniform state many like to think it was. Just take a look at this GIF of China’s borders throughout history:</p>
<p><a href="https://www.digmandarin.com/wp-content/uploads/2016/07/Dynasties_in_China.gif" rel="attachment wp-att-7444"><img loading="lazy" class="aligncenter size-full wp-image-7444" src="https://www.digmandarin.com/wp-content/uploads/2016/07/Dynasties_in_China.gif" alt="Dynasties_in_China" width="556" height="537" /></a></p>
<p>With China’s 56 ethnic minorities and its long history of outside influencers, what makes romanticized Han culture so fundamental to China’s internal and global image? Largely, a rewriting of history. Despite reliable historical records from the time, much of the public’s image of the mythologized Han Dynasty comes from an historic-fictional tale called <em>Romance of the Three Kingdoms (</em><em>三国演义</em><em>)</em> written some 12 centuries after the fact. The book is one of Four Great Classical Novels, a canon that idolizes a Han people triumphant in the face of barbarism and outside influence.</p>
<p>Literature has no doubt played a significant role in shaping public image of what China was and should be. If you don’t take stock in the significance of history and the way it is told in art, just take a ride on any metro in any city in China and you’ll see person after person watching Han period dramas on her phone. But perhaps even more significant than literary propaganda in perpetuating the idea of a homogenous China is the very modern conception of “nation.” China may have been unified over 2000 years ago, but it didn’t become a country as we know it until 1949 (or 1911 depending on whom you ask).</p>
<p>That’s right: before 1949, China was little more than a diverse collection of dynasties and tribes occupying the general area we know as the China of today. In order for the new, Communist regime to rally support, it had to rewrite and re-conceptualize its own history along a linear timeline. It had to convince the people to adopt one time zone, one language. Mao Zedong codified the Han Man’s Burden into law. The history of the nation would be that of the Han people, the Han culture. The language that would be adopted would literally translate as “the language of the Han people (汉语).”</p>
<p>Of course, not even forced homogenization created a singular, “real” China. The infographic below (courtesy of That’s Mag) of the current languages spoken in China demonstrates just how diverse China still is:</p>

<p>Nineteen forty-nine ushered in a new China, one obsessed with modernization, unification, and catching up with the West. As such, Shanghai is the perfect representation of the new China. No matter where you are in the city, you can’t walk five minutes without running into an extravagant shopping mall—and yes, a Starbucks too. Perhaps the city doesn’t have the rice paddies of your imagination, but it is as much China as Zhangjiajie or rural Sichuan. If the real China is a product of well thought out unification propaganda, Shanghai is as real as it gets. The city—the country’s largest—boasts a melting pot of a population. Walk down to the nearest bar street and you’ll see a woman from the mountains of Anhui chatting it up with man from South Korea, a little French baby being pushed in a stroller by his Hunanese ayi, and a jovial Shanghainese woman selling imported beers to a college student from Harbin. Shanghai is a well-oiled utopic machine: millions of diverse people and cultures coming together under one name. While that name is no longer Han but Capitalism, Shanghai is the unified city that leaders throughout China’s history have dreamed of.</p>
<p>So is the real China the sexy qipao worn by wealthy women during Manchurian rule? Is it the Great Wall that only remains preserved in designated tourist areas? Is the real China the mountains of Tibet or the deserts of Inner Mongolia? Is it orange chicken and Dim Sum and all things Cantonese? Is the real China the Han people and the Mandarin language? Perhaps it is all of these things and none of them at the same time.</p>
<p>I still haven’t found the real China. I wait in vain for a Schrödinger’s Cat that exists and does not exist, a Godot that will never arrive. And while I’m waiting, I think I’ll go get a Starbucks.</p>

<p>Seda Monastery is the world&#8217;s largest Tibetan Buddhist School. The school captures the elegance of a holy place lost in a sea of tiny red houses in western Sichuan.</p>
<p>Seda, known to Tibetans as Serthar is located in Ganzi prefecture in the west of China&#8217;s Sichuan province was briefly a hotbed of protests and violence since the Tibetan uprisings of March 2008. The Seda Monastery has grown rapidly to become one of the most important Buddhist schools. The surrounding hillside is now home to the monks who study at the school. The monks will go to school and study Buddhism every day. They have a few hours a day to rest but during the rest of the day they study and pray. The local residents from neighboring villages, like the woman in traditional dress (below) also make the journey to Seda just to pray.</p>

<p>The Dongchuan Red Land is a 77,000-square mile area located about 25 miles southwest of Kunming City. The region’s subtropical climate causes iron to oxidize and deposit in the soil, which gives it a deep red color. The red soil color is emphasized by the other colors of the surrounding landscape, contrasting against green barley, golden buckwheat, white oil flowers, and the blue sky. Often described as a &#8216;palette&#8217; of colors, the area is best visited from either May to June or September to November, when various crops are ripe and the colors are most distinct.</p>

<p>Qian Dao Lake, also known as Thousand Islets Lake, is a man-made lake developed in the 1950s after the completion of the Xin&#8217;an River hydroelectric station. More than 358 square miles of villages, plains and hills were evacuated and flooded, unintentionally creating a dream-like landscape of more than 1,000 tiny islands. Many of these islands have since been developed for tourism, with some featuring themes and offering activities ranging from water skiing to mountain climbing.</p>

<p>Located in Northwest Xinjiang, Nalati Grassland is one of the world’s four largest grasslands and the highest one in China. The first words that come to mind when you arrive in Nalati are idyllic, pastoral, and serene. There are rolling hills with sheep and horses grazing on lush green meadows, shimmering streams, fresh air, all surrounded by high, snowy mountains. Summer is the best time to visit when the grassland is covered in colorful wild flowers.</p>

<p>With its deep green onion domes and golden crosses, Saint Sophia Cathedral is one of Harbin’s most recognizable landmarks. Standing 177 feet tall, the church is the largest Orthodox Church in East and Southeast Asia. It was built by Russian expats in 1907, managing to survive the Cultural Revolution that saw most of the city’s other Orthodox churches destroyed. Today, the church’s unrestored interior houses a museum dedicated to the city, while its front square is a popular local gathering spot.</p>

<p>Xitang is a traditional water village in Zhejiang Province near Shanghai, and was built on canals and rivers. Historically during the Spring and Autumn season, the village was located between the states of Yue and Wu. Nowadays, there are way too many people visiting, and the village has been adjusted to what the local tourism board thinks foreigners wants. For example, some of the houses have been re-styled to take on the shape that foreigners expect them to be – even more ‘Chinese’. All houses and streets are also lined with lanterns. Before the tourism changes, you could easily come here and experience real village life. Now, everyone’s livelihoods have become entangled with tourists and lost its sense of history.</p>
<h2>No. 9 Niubei Mountain</h2>

<p>Niubei Mountain is located in Yingjing County, Ya‘an, Sichuan, bordering Luding County. The mountain is a branch of Mount Erlang, and also the watershed of Qingyi River and Dadu River. The elevation of Niubei Mountain is 3,600 m. On one side of the mountain, the rocks on the cliff resemble a bull’s head, while the thin and long ridge looks like a bull’s back. If you stand on the pediment and look around, below you is the tumbling sea of clouds, and around you will be the vast snow mountains. The spectacle is amazing and jaw-dropping.</p>
<h2>No. 10 Guanyin Statue</h2>
<p><strong>观音像，海南省 (guān yīn xiàng, hǎi nán shěng)</strong></p>

<p>This massive statue is dedicated to Guanyin, the Chinese Buddhist goddess of mercy, and is a part of the Nanshan Temple Complex. At 354 feet, the statue towers over the surrounding area. It’s said to be the world’s tallest statue of Guanyin, as well as the fourth tallest statue on the planet. The statue has three faces, one of which looks towards the land, and the other two point towards the South China Sea.</p>
<p>China is such a large country and it’s always not easy to explore all over the country. Want to buy things on <a href="http://www.taobao.com">Taobao</a> (China’s excellent answer to Amazon Prime – no membership required) but aren’t sure where to begin? You’re in the right place!</p>
<p><a href="https://www.alipay.com/">Alipay(zhi fu bao)</a> is one of the most widely accepted forms of payment here in China. Even taxi drivers typically accept Alipay, including ones who won’t take bank cards! It can be used both in person at a vast majority of establishments (any place that shows it’s blue and orange logo, labeled “Alipay” or in Chinese below), as well as online – either to pay for food at sites like Ele.me or waimaichaoren, to pay for your recent TaoBao adventures (see above), or simply to send money to friends. Furthermore, once you have an account, you can set up Alipay’s mobile app to do all of this on the go, by just showing your phone! It’s essentially China’s Paypal, and can make life in China a lot more convenient, but setting it up as a foreigner can be a little tricky. We’ll show you how.</p>
<h2><span style="text-decoration: underline;">Step 1: Gather all the information you need</span></h2>
<ul>
<li>Have pitcures of your passport and your current visa page ready</li>
<li>Have all your bank account information ready, and your bank card info</li>
<li>Make sure your bank has been enabled for online payments (at ICBC, for instance, they will give you a little USB dongle to validate your online payments)</li>
<li>Have up-to-date text updates from your bank.</li>
<li><strong>IMPORTANT: </strong>Know the <strong>exact </strong>spelling of your name on your bank account. Failure to input this exactly will likely result in you being unable to verify your identity with Alipay, which will limit your Alipay account’s functionality.</li>

This part is a little tricky, but we’ll make it as easy as possible for you!</li>
<li>Start by logging into your Alipay account with your email and password. <li>On the following page, be VERY careful!  Fill it out, once again using the name listed on your bank account EXACTLY.  This includes any spaces and is case sensitive.  Banks love using all capital letters, and if you don’t, you’ll have to wait a couple days and start over.</li>
<li>Upload your photos of passport and VISA. They don’t have to be scanned (phone photos are OK), but they should be clear enough to read everything. <li>If a page comes up with a red x, something went wrong. It might have been an issue with the name (in wrong order, or CAPS wasn’t on, etc. Click on the blue link to restart the process. 7 days later, you will be able to try the process once again.</li>
<li>If a page comes up with a green check mark, congrats! Alipay will transfer to your bank card some amount under 1 RMB to make sure your bank account exists, and all you have to do is return to the page once you receive text confirmation with the amount of the transfer, input the amount, and you’ll be verified! You can see the details of what this looks like below. (If you don’t see this page, but received the transfer amount, wait a couple minutes and try again. 										<content:encoded><![CDATA[<p>For the last two years, I’ve been a fellow for <a href="http://www.tfchina.org/">Teach for China</a> (美丽中国) in Guangdong, China where I taught 1<sup>st</sup> – 5<sup>th</sup> graders English and Music.</p>
<p>China is too big to be summarized by the word “China”. This is true about all countries and every place ever. From where you are right now, if you move ten minutes in any direction, you are in a whole new world. This is similar to how your neighbour’s home will look and feel very different from your own. It’s true about appearances, cultures, behaviours and lifestyles. I write this so that you keep in mind how subjective the opinion presented in this article is, and use it as intended &#8211; as some guidance on how to think about Teaching in China. Moving here is a big decision that should be based on multiple factors, and immigrating to a new country is not for the feint-hearted. China offers great opportunities for those interested in teaching English in China. The English language market has been growing fast in China, and many new positions are becoming available.</p>
<p>Teaching English in China, is a different experience depending on where you teach. Typically teaching in China will take place at language training schools, public schools, International schools. Teachers entering into these Chinese teaching jobs can expect a competitive salary, which includes a variety of benefits, depending on the type of school and located cites.English teachers, especially native speakers with a TESOL or TEFL certificate, work only a few hours per week and earn quite well in China: about 12,000 RMB/month (about 2000 USD) in second-tier towns and even 16,000 RMB/month in Shanghai or Beijing(with benefits such as living arrangements, VISA and health insurance paid for, and even a flight home every year if you play your cards well). Keep in mind that TESOL or TEFL online certificates are not considered as good as the ones obtained in a classroom. In urban big-city China, your goal is mainly to help the urban elites progress towards applying to the best colleges in the world, and ensuring that they are ready and prepared for the inevitable integration between the West and East.</p>
<p>Teaching English, for me, in my small village in Chaonan was more about providing kids with an environment to practice their English outside the classroom. This was because nothing in their environment gave them this extra exposure apart from the fact that a foreigner had somehow stumbled into their world. You definitely cannot get paid for teaching in a small unknown part of China nearly as much as the bigger cities but if its adventure and experience you seek, then that is the way to go. Just don’t expect any savings, and a variety of friends. Village life is slower, kinder, and gentler but perhaps better suited for retirement than people in their twenties who have grown up in large cities.</p>
<p>As far as the teaching goes, NGO teaching will contain much less guidance while teaching in the big city will contain far too much structure. In Teach For China, I was left with a little bit of training but mostly to my own devices to figure out how to teach. From my discussions with people in training centers in bigger cities, it seems that there is a lot more guidance and training here which isn’t ideal if you prefer a more creative approach to teaching but is ideal if you prefer goal and target oriented work. What I’m presenting here is not the absolute division that creative teaching jobs cannot be found in the city and goal oriented jobs cannot be found in the smaller parts of China. Instead, it is just a general guideline on where to look based on the kind of teaching job you seek.</p>
<p>Even though demand for foreigners is extremely high right now, I recommend being competent in Mandarin to the HSK level 2 and near HSK level 3 standard. This is because otherwise, you might be distracted from your teaching job with some of your focus going into dealing with a different culture, and learning the language. Early exposure to the language will mean a smoother transition to Chinese culture, and hence make you a better and more effective teacher.</p>
<p><strong>Overall</strong>, the best part about Teaching English in China is getting to be on the brink of this culture clash, which is so unique to our generation. Everyone today, and especially young people on the Chinese, and Western sides both seem to be excited about engaging. And for me, being Indian makes it even more interesting. I see the immense partnership between the USA and China blossoming and cannot help but wonder, how India fits into this puzzle.</p>

										<content:encoded><![CDATA[<p>As a part of the China’s new “comprehensively deepening” reform and open policy, the Chinese government is considering to launch a new policy for international student who are studying in China’s Universities which will allow international students to directly seek a job and stay in China after graduation. While in the past, the international students in China’s universities have to go back and “serve” their own country for at least two years before coming back China for a full-time job. However, this new policy is cautiously carried on where it will only be put into practice in Beijing and Shanghai as a pilot area.</p>
<p>This small change will bring big differences to those seeking to work in China. For international students who are planning their education in China, they are free to find a job after graduation in China. For China’s universities, they will become competitive internationally at the collegiate level.</p>
<p>We will introduce some top China’s universities and China Study programs. If you are planning to attend some courses or work on your degrees in China, we hope that this information can be of some help.</p>

<p>The ranking may changes by year, however Beida and Qinghua in Beijing, Fudan and Jiaoda in Shanghai have a well-known reputation in the education world. In mainland China, there are also qualifying numbers for universities that reach a certain standard set by the China’s Ministry of Education. These numbers are &#8220;985&#8221; and &#8220;211&#8221;. <a href="http://en.wikipedia.org/wiki/Project_985">&#8220;985&#8221; Universities</a> are top schools within the country and there are only thirty nine &#8220;985&#8221; Universities. The title “985” originates from a speech delivered by former president Jiang Zemin in May of 1998 for Peking University’s 100th Anniversary. After the speech, the Chinese government launched the “Project 985” which evaluated universities’ all-round performance and invested a huge of amount of money to China’s best universities in order to push them towards the “World First Class” University.</p>
<p>Before &#8220;Project 985&#8221;, the Chinese government had launched <a href="http://en.wikipedia.org/wiki/Project_211">&#8220;Project 211&#8221;</a> from 1991 to 1992 to establish China’s top 100 Universities in the 21st century. Technically, all &#8220;985&#8221; universities are &#8220;211&#8221; universities, but it isn’t the same vice versa. The students who graduated from 985 or 211 Universities enjoy obvious or some potential advantages in the job market given their academic prestige.</p>
<h2>Top China Study Program in China’s Universities</h2>
<p>If you are planning to join in a China study program in Mainland China, you should first look for one in the top ten or 985 universities. For example, the famous <a href="http://yenchingacademy.org/">Yenching Academy China Study Master Program of Peking University </a>which offers courses from Chinese history and culture, to real-time issues in China’s development. The program’s core courses are:</p>

<p>These study programs are generally language and culture balanced. The language courses provide Chinese classes with all levels from beginners to advanced learners. The culture courses include Brief Introduction to China (English instructed) and Cultural workshops such as calligraphy, painting and Kungfu.</p>

<p>However, if you plan to learn Chinese Language in China, you need to know that some good options for institutions may not be in the top ten or &#8220;985&#8221; Universities category. Since many good language degree programs come from universities that specialize in language training, their quality might not be reflected in the overall rankings. For example, the BLCU, Beijing Language and Culture University located in the center of the universe “Wudaokou”, also known for its ridiculous large number of international students and high real estate price. BLCU is the only university in China that specialized in Chinese language and culture education to foreign students. Since it’s founding in 1962, the university has trained over 150,000 foreign students from 176 countries and regions. It has a full range of cutting-edge <a href="http://admission.blcu.edu.cn/en/Info.aspx?m=20140312160549933938">Chinese language and culture studies program and various graduate students programs</a>.
